Easy-Peasy Recipes

As promised here are some of the lovely things I made on Sunday evening. I don't see anything wrong with using shortcuts if it saves time! I didn't follow any recipes to make these, I just experiment as I go along. They are really simple to make and adapt to suit your on tastes.

P.S these are just stock photos as I forgot to take any of my own as I was too busy cooking!


Piri Piri Chicken & Chorizo Skewers

1. Dice two chicken breasts into roughly 2cm cubes.
2. Take a stick of spanish chorizo and chop into chunky slices.
3. Chop a pepper into large pieces ( a mix of red and green peppers looks nice)
4. Slide the chicken and chorizo onto wooden skewers spaced with some of the pepper chunks.
5. Sprinkle the chicken with piri piri spice mixture.
6. Place under the grill for approximately 10 minutes or until the chicken is cooked though.

Sweet Chilli Prawns

1. Take a packet of large shell-off prawns and add them to a pan with a little oil.
2. Fry the prawns for a couple of minutes until they start to curl up.
3. Add a sprinkle of garlic powder (or chopped fresh garlic) and a drizzle of sweet chilli sauce.
4. Keep on the heat for another minute of so to ensure they are hot all the way through.
5. Serve on a bed of lettuce.

Spanish Style Meatballs

1. Use one packet of pork mince ( you can also use beef if you prefer) and break up in a large bowl.
2. Break an egg into the bowl and mix well with the mince. Add herbs and seasoning as required. ( I sometimes cheat and use a spice mix) You can also add finely chopped onion at this stage if you wish.
3. Flour your hands and work-surface then begin rolling your meatballs. You should make about 10  or 12 3x3cm balls.
4. Compact the meatballs but do not mess with them too much, use flour to stop them being sticky.
5. Place the meatballs in a hot lightly oiled frying pan to keep them together and to cook through.
6. Lower the heat then add some tomato frito and tinned chopped tomatoes. Sprinkle in an OXO cube and some herbs for additional flavour.
7. Simmer for at least 10 minutes to ensure they are cooked through.

Bacon and Philli Stuffed Jackets

1. Place your jacket potatoes on a baking tray and sprinkle the skin with a generous amount of salt.
2. Place in your oven at gas mark 7 and cook for between 45 mins- 1 hour depending on the size of  potatoes.
3. Chop up some bacon and fry it off.
4. Take the jackets out of the oven and carefully scoop out the potato into a bowl, it may still be a little hard. Mash in some butter & phillidelphia, then mix in the bacon pieces.
5. Scoop the mixture back into the jackets and place back in the oven at a hotter temperature for a further 10 minutes.
